[Screen title: Sourced True Organic Kale] [Screen title: Robert McCormick – True Food Kitchen Brand Chef] Robert: So we’re in Oxnard, California visiting San Miguel Farms. It’s our organic kale grower. They’ve got over 250 acres here
in the area. Kale itself is one of the most
nutrient-dense foods actually on the planet. It’s just cool to see where it
all starts. How are you Garrett? Garrett: Good. Nice to see you, Robert. Robert: Likewise. Robert: It was your uncle that kind of started the farm, right? [Screen title: Garret Nishimori – San Miguel Farms] Garrett: Yeah, he started the San Miguel
Produce in 1976, and we really started growing commodity vegetables then . Really in the 1990s we kind of saw the industry shift and we wanted to do something
different. We really focused in on dark leafy greens like kale that’s moved its way
from a garnish to the center of the table. Robert: Should we harvest some Kale? Garrett: Yeah. Garrett: This is the Tuscan kale we harvest for your restaurants. Organic is the biological approach to farming. It’s using organically-derived materials to to give the plant what it needs. Robert: Leafy greens, green vegetables in general, some of the thin-skinned fruits.. really important to use organic produce. Garret: I think it’s great that concepts like True Food Kitchen can incorporate it on the menu. You know, in the future, organics is the way to go. Robert: So this Tuscan kale has been a cornerstone ingredient on on the True Food menu since day one. We love it because of its versatility super resilient, packed with nutrients vitamin A, vitamin C, vitamin K loaded with antioxidants, fiber chefs love working
